In the rich, alluvial soil of Lambrusco di
Sorbara in Soliera Italy, just outside of Modena in the Emilia Romagna region, the Maletti family has been producing quality
traditional balsamic vinegar (aceto balsamico tradizionale) for generations. The Maletti's produce their balsamic vinegar
from the wine and grape must (unfermented, pressed grape juice and pulp before it's turned into wine) of selected Lambrusco
(red) and Trebbiano (white) grape varietals. Their vinegar is aged in an accelerated yet regulated evaporation process in
former wine barrels of French Allier oak. The six year vinegar has an extraordinary density, aroma and depth of flavor with
a clean delicate finish. Maletti balsamic vinegar is superb on a wide range of dishes, from fresh strawberries to salad greens
topped with Parmigiano Reggiano shavings to most any meat dish. Imported from Italy. 250 ml. bottle.
KATZ Rock Hill Ranch Exta Virgin Olive Oil
OLIVES: Taggiasca and Casaliva…65% of the blend, these varieties, which are native to the Ligurian and Lombardy regions of Italy respectively,
are grown on the Rock Hill Ranch in the Suisun Valley, California. Both of these varieties are known for their soft and persistent
fruitiness with sweet overtones producing a lush mouth feel. Leccino…35% of the blend, this Tuscan cultivar gives the
oil its green hue and classic grassiness and herbaceousness. TASTE : Very low .19 acidity and a 5.2 peroxide reading.
Hand harvested and bottled unfiltered; the oil has an expansive nose of artichoke, almonds and herbs with a lush mouth feel
and a pleasant and pungent finish. A three-time gold medal winner, it compliments simple fish, poultry and vegetable dishes,
or use it to liven up a risotto with wild mushrooms or polenta with braised greens, or make a bold fruity dressing for arugula
or spinach salads…be inspired!

of Italian sea salt, dried & ground fruit, sweet spices, vanilla, chocolate, and a grape must, it is fabulous with both
