Calabria is the "toe" of the peninsula that is Italy. The Calabrian Pepper, known
as the naso di cane, or "the dog's nose", was first introduced to the Calabrese upon the return of Columbus to
Europe in 1493. It became the preferred spice of those who weren't privileged enough to use black pepper.
The chile pepper, or peperoncino as it is known in Italian, was quickly introduced into the local
cuisine throughout Southern Italy

Demi-glace: A type of brown sauce traditionally
made by combining equal parts of beef or veal stock and espagnole. Espagnole is prepared using a
very dark brown roux, to which are added several gallons of stock or water, along with browned bones,
pieces of beef, many pounds of vegetables and various seasonings.
It is then simmered and reduced by half. The result is a thick, rich concentrated sauce. While the
demi-glace is suited for meats and other rich dishes, it is more commonly used as a base for other rich sauces and soups.
