We currently manufacturer small batch pasta specifically designed for those with wheat allergies Our Spelt Pasta is made without semolina and subsitutes Light Spelt Flour.
Availability: Please order your pasta 24 hours in advance as we will not stock Spelt Pasta regularly. Contact us at 615.291.9922 and we will be happy to prepare your pasta. All Pasta is made with 100% spelt flour, whole eggs, water and extra virgin olive oil. Always handmade and always fresh.

Cooking Instructions: All orders include a convenient post-card size reference guide. This card includes preparations instructions, simple fresh pasta sauce recipes, and helpful kitchen tips on handling and using fresh pasta and ravioli.
Storing and Using: All pasta is made fresh and should be prepared within 3 days IF COOKED FRESH. It can be frozen. If cooked frozen, use within 30 days.
Serving Suggestion: Typically, 4-6 ounces of uncooked pasta per person. Once cooked. a 1 pound box will typically serve 3-4, depending on garnish and sauce, additional sides and, of course, appetite.
